Highlights From This Week

I hope everyone has had a wonderful week. I had my first full day back at work this week so it was a bit busy and I was all over the place. Even though this week has been a little more hectic than normal, I still had several highlights pop out to me.

Lactation Room


Now that our baby girl is in daycare I have become a pumping machine. It is hard to balance work with pumping but something that makes it a bit easier is a nice, private space to relax and express without the added stress of someone interrupting me or being uncomfortable. This room in the student center is perfect!

Stairmaster Workout



Earlier in the week I attempted my “first run” and it didn’t go so well. Everything from the waist down felt great but my chest area was in serious pain. Apparently new sports bras are a must in order to help with the soreness that breastfeeding has caused. Anyway, after throwing in the towel with running for the day, I decided to hop on the Stairmaster for a quick 20 minute workout. I was short on time but still wanted to get in a great sweat. I decided to do an interval style workout by spending two minutes at the following levels: 6, 7, 8, 9, 10, 10, 9, 8, 7, 6. I also included a warm-up and cool down. It was TOUGH after taking it easy for a few months. If you decide to give it a try let me know how it goes. 

Kodiak Cakes

After seeing these on Janae’s blog and finding out they were on sale at Costco, we had to give them a try. After having them for breakfast a few days ago, we were instantly hooked. They have such a hearty delicious flavor that makes you feel like you are eating something unhealthy. They are filling due to the protein and make for a great pre- or post-workout food. We loved them so much we decided to have them for dinner last night! We will be going back for more this weekend.

Panera Flatbread Sandwich


On one of our first outings with little T, we realized while we were out that we forgot to eat lunch at home before leaving. We both wanted something quick but healthy because we aren’t big fans of fast food (most of the time). We decided to go to Panera because it was in the shopping plaza we were at. I had only ever had their bagels so I decided to branch out and try one of their flatbread sandwiches. I opted for the Chicken, Ham and Swiss on whole grain flatbread and it was magnificent. Ever since having it that day I have been craving another. The student center on my campus happens to have a Panera and because I forgot my lunch yesterday, I chose to go and get the sandwich I have been dreaming about. It was just as good as I remember and I think my wallet will be taking a hit in the next few weeks.

Boilermaker Chili

A while back I went out of town and my husband decided to make this chili because I am not a fan of spiciness. When I got back he went on and on about how delicious it was and that he wanted to make a less spicy version for me. We kept putting it off because it takes quite a while to prepare. We finally decided to do it this week and he was right. It is delicious! The best part is, we have tons of leftovers so we will be enjoying this chili again this week.

I realize that the majority of my highlights involve food of some sort. That seems to be the trend in my life.

Love Yourself and Our Weekend

Happy Monday! I hope everyone had a great weekend whether or not you chose to celebrate Valentine’s Day. We had a rather laid back weekend that was much needed after my first week back at work.


Friday night I went to my first yoga class since giving birth. I had no idea how much tension I had in my body! It was a challenging flow that kept me engaged the entire 60 minutes. The focus of the flow was on loving yourself (a special Valentine’s Day class). We were all given a piece of paper and a pen at the beginning of class that we were encouraged to write a word, phrase or quote on that was uplifting and/or loving to or about ourselves. I chose to write two loving sentences to myself that I ruminated on throughout the class. It was a nice reminder to go easy on myself and to stop being so negative towards myself. It was the perfect start to my weekend.

Saturday and Sunday

I have never been a fan of Valentine’s day. We don’t even really celebrate it in our house. Usually we will go get some candy the day after while it is on sale. Other than that, we keep it low key with a simple card or a dinner together. Saturday morning, while my husband was outside, a package arrived. At first I thought it was something baby related because, let’s face it, every package we have received in the last few months has been for the baby. When I opened the door and saw the box, I was completely surprised to see a box of beautiful red roses from my husband.


Of course I had no idea because we normally don’t do anything so I had nothing for him. When I asked him what he wanted, he said he just wanted to watch Netflix and chill out on the couch. So, for our Valentine’s Day, we did just that! And, because we are unconventional, we decided to binge watch X-files all day long.

On Saturday, we made a delicious chicken noodle soup (recipe to come) that we had as leftovers Sunday so there was no cooking involved! 

It was the perfect weekend for this exhausted mama!

A Lazy Weekend and Date Night

I hope everyone had a nice weekend. Ours started with a Friday night yoga session. It is always nice after a busy week to unwind with an hour of strength and balance that leaves my body extremely relaxed. When we got home, we were pretty tired so we watched the end of Young Frankenstein and were in bed by 9.

Friday night I had a really hard time sleeping. I have developed hives on the bottom of my feet last week and they got really bad Friday night. I wasn’t able to sleep at all because I was itching so badly. I finally got about 2 hours of sleep before deciding to give up. We were supposed to go to a birthday party Saturday but I was so exhausted that we decided it was best to just stay home. I was able to find some relief with Benadryl that allowed me to take a nap for about an hour. After waking up we made a quick run to CVS to pick up some prescription anti-itch cream. Let me tell you, the difference was night and day.

With such a nice relief from the constant itching, we decided to venture out for a date night. We chose to go to Longhorn for dinner. We each had a salad and split some delicious bread and butter.


I have a really hard time getting new things at restaurants because once I find something that I love, it is almost impossible for me to justify getting something else. It’s not that I don’t like getting different things. It’s just that if I know there is something I really like, why risk ordering something that I might not like. That long rant was just to say that I ordered the chicken tenders like I always do (Side note: I have most definitely had a steak at Longhorn since it is a steakhouse, I just usually get the chicken). The tenders are battered in some delicious concoction that has such a unique flavor. I also always get the sweet potato because you can’t go wrong with that super food (especially when it is filled with cinnamon, sugar and butter).


Of course my husband is the opposite of me and usually likes to try new things at restaurants. Thankfully, he has no problem sharing his food with me. In fact, most of the time he gets upset if I don’t try his food. We usually end up sharing. It’s nice when we are at a restaurant because we can order separate things and still get to eat both. He got the steak with mashed potatoes. The steak tasted amazing. Perfectly cooked to be juicy and tender.


Unfortunately, I got pretty sick after dinner and spent the rest of the night on the couch feeling yucky.  Sunday after church we made a quick run to Costco and stopped by the mall for me to pick out a dress for a wedding we have in the near future. While there we chose to eat lunch in the food court (nothing to write home about). Dinner was super delicious crock pot chicken and dumplings. Yum! A great way to end the weekend.

Labor Day Weekend

Good morning and happy Tuesday! I hope everyone had a great long weekend. We were fortunate enough to get Monday off so we took full advantage of the holiday weekend.

Friday and Saturday

Friday night we went to yoga and our favorite yoga teacher was subbing. It was a perfect way to start the weekend because it is a balance of strength and stretching that allows my restless body to actually settle down and sleep soundly. We also put together a new dog bed for Sirus. I think he likes it.

Saturday was the usual Costco run for the necessities, but only after a last minute decision to eat at Cracker Barrel. It was a good decision. Their grilled tenderloins never disappoint. Once again, I forgot to snap a picture (I promise I will get better about this). The rest of Saturday was spent cleaning house.

Sunday and Monday

After church on Sunday we each ate a quick lunch out of things we had at home and then we loaded up Sirus and headed to my grandparents house. Once we got there Granny and I went over some baby shower details before everyone else arrived. We decided to watch Jungle 2 Jungle because somehow my husband had never seen it. It is a classic…if you consider things from the 90s classic (which I do). 


After the movie we had some roast with potatoes followed by some cake and ice cream.

Monday we had a small breakfast because we knew we were going to have an early lunch. My family tends to cook enough to feed an army because we don’t want anyone to be afraid of getting seconds or thirds (and honestly, everyone loves leftovers). So, we had 4 wracks of ribs, two pans of fried okra, a few boxes of mac n’ cheese, burgers and hot dogs. Yeah, talk about full.

After lunch, we decided to head home so that we could do a few things around the house before the weekend was over.

Weekend Getaway

Last Thursday we loaded up and headed to the in-laws for a long weekend. We were both fortunate enough to get Thursday and Friday off so we could make the 6 hour drive to south Alabama for some family time. We left pretty early so that we could get there at a decent hour. Sirus was a little antsy at first because he wasn’t ready for the long drive (he is used to an hour drive). After an hour or so, he calmed down and just sat looking out the window. We stopped at a rest area half way there and he ran around and had his lunch. This was his first time at a rest area and I think there were just too many smells and sights for him to take in because he just didn’t want to eat or use the bathroom for a bit. After about half an hour we were on the road again (I can’t be the only one who sings that when they say/write it). We arrived around 3pm so we had some time to unwind before dinner. After dinner we watched TV for a bit before calling it a night. Traveling wears you out!

Friday morning before it got too hot, my man and I decided to go kayaking (his parents live right on the water so we can launch from their pier).


We went out for about 40 minutes before turning around and heading back.

After cooling off for a bit and having a snack, all four of us went out on the boat. We rode to Flipper’s Restaurant for lunch. Unfortunately I left my phone at home so I have no pictures. New blogger fail. I had the burger and fries and it was alright. I mostly liked the atmosphere of the place. My favorite part of the meal was at the end when the waitress brought out a free bowl of homemade vanilla ice cream for each of us to enjoy. Perfect for a hot day on the water!


After lunch we rode around admiring the beautiful water and saw quite a few porpoises out playing. This isn’t my picture but it is a pretty accurate depiction of what we saw.


After we got back to the house, we all took an afternoon nap because the heat takes a lot out of you. After our nap we started up the fryer and battered some shrimp and fresh crab claws.


It was ready in a flash and we had no trouble finishing off every last bite. As if we weren’t already stuffed enough, we decided to indulge in some homemade vanilla ice cream (because one time wasn’t enough).


Unfortunately, we had to cut the trip short due to my husband receiving an email about a last minute retreat that he had to prepare a presentation for. So Saturday morning, we loaded up after breakfast and headed home. It was a short visit but we packed a lot of stuff into it!

Sirus slept the entire way home and we made it back in record time. Next time maybe we will have more time.
